This deep yellow sauce smells strongly of mustard and vinegar, with a bit of fruit hiding in the background. You can really smell the heat from the scotch bonnets. The first taste is of mustard and fruit juice. It takes a moment for the flavors to come together, but they transition nicely. The scotch bonnets are noticed quickly and produce a good medium heat. The first bite’s linger is quite sweet from fruit juices such as papaya and pineapple. The second bite brings a touch of honey and molasses, but a deeply earthy flavor from spices like turmeric and cumin as well. This has a nice combination of flavors from sweet to earthy, all rounded out nicely by a medium heat glowing in the background.


Breakdown: This is a solid choice for a Caribbean style hot sauce. Lots of sweet, nice spices, and I always love the scotch bonnet flavor!
