YEAK BAITHONG

This one was a pleasure to review. The first taste started with a very sweet, almost candy-like flavor on the tongue. That candy sweetness lingers but transitions to a tangy-sweet sensation as the vinegar starts to come through. After just a moment, I noticed the very green jalapeno flavor. Everything rolls together and creates a delightfully complex flavor resembling a fermented jalapeno sprinkled lightly with sugar. This sauce has a gentle heat that is lingers with the help of just the right amount of tangy vinegar. I noticed a very slightly salty and garlic aftertaste that left me craving more.
 

Breakdown: Very sweet, gentle heat. Extremely versatile, but tastes excellent as a glaze on chicken and pork.
