HABANERO WONDER TONIC

Fruity and fiery habanero greet the nose with a hint of tart vinegar. My first taste was quite fruity from the habanero, combined with some citrus notes and an earthy linger. Habanero quickly takes center stage on the taste buds, prolonged slightly by the tangy vinegar. Citrus keeps this sauce bright without allowing the peppers to overwhelm the senses. This is a great showcase of the fruity nature of the habanero pepper.
 

Breakdown: This is a great “no frills” sauce. It captures the full flavor of a habanero without having to eat one raw, and keeps it at a manageable level. Thick, decent sauce!

TROPICAL CITRUS SURPRISE

This Dr. Scoville offering is a vibrant hot sauce with a vinegary smell, accented by bits of habanero and fruit juice. The first bite is very zesty, with lemon juice and a very pronounced orange zest flavor. A quick kick from the habanero blends well with the fruity flavors. The second taste brings on the mango and a bit of crisp earthy notes of bell pepper. Garlic lingers very lightly after the finish to round out a nice Island Style hot sauce.
 

Breakdown: This one has a bright flavor, but it’s a bit too sweet for me. After you’ve tried it, tell me it doesn’t taste exactly like an orange Starburst candy… I highly recommend putting this on fish tacos!

GINGER THAI CHILI

Dr. Scoville’s Sweet & Spicy Ginger Thai Chili is a mouthful, both in name and in flavor. This thick and syrupy sauce smells of chilies, ginger, and sweetness. The first bite is very mild, quite similar to a sweet and sour sauce with ginger on the linger. A slight heat builds before taking the second bite, which features the Thai Chili and even more heat. This flavor combination continues to carry through the tasting, with ginger and garlic as the most prominent flavors. Very slight notes of fish sauce and anchovy really open the flavor profile without being too powerful. They are very easy to miss, but play an interesting role to really put an emphasis on the Thai flavors.
 

Breakdown: I expected a sweet and sour sauce here, but got so much more than I had hoped. It’s very sweet, but the heat and other ingredients make this a killer sauce. It’s awesome one wings.

SWEET JALAPEÑO GRASS FIRE

A sweet and grassy smell comes from this bottle, with just a touch of vinegar. Brown sugar and maple syrup are the first flavors tasted here. The sweetness is almost too much before a hint of onion brings it back and quickly turns to a solid heat. This heat builds momentarily before subsiding into a smoky tail. Jalapeño and Poblano team up to give it a nice grassy pepper flavor with a medium heat, which mixes nicely with the hickory smoke. The heat profile slowly changes from jalapeño to habanero, which keeps the heat from dissipating entirely on the linger. Brown sugar and molasses keep the flavor savory and sweet, resulting in a nice even burn that balances sweet and heat.

Breakdown: I like the brown sugar and maple syrup combined with the spice from the pepper medley. It’s a bit thick and syrupy, and a little sweeter than I like, but it’s a good sauce for an even burn! Try it on tacos.
